Italian Cooking Class offers the opportunity to make delicious traditional and new-style dishes from various regions in your kitchen. Ranging in ingredient selection, techniques, cooking and plating styles, choose from quick and simple Italian recipes to more advanced applications depending on your interest and experience. Emphasis is on dishes that are a bit flexible and can be prepared in advance, at least partially, so it is easy to prepare at home. Representing Italian cooking as it is done in Italy, this section includes instructions for traditional Italian recipes as well as ones with a slight twist on a classic dish, such as Italian pasta, Italian chicken recipes, Italian chocolate desserts or a new way of looking at and preparing an ingredient. It’s Italian cooking classes in your own kitchen – have fun cooking!
The techniques and flavor profiles are based on my experience cooking in Italy for many years. Some recipes are prepared using few ingredients and simple techniques. This means fresh, quality ingredients are essential, coupled with techniques well-executed so your cooking shines. We are not covering up flavors with excessive garlic, herbs and heavy sauces; we are maintaining the inherent integrity of the ingredients and your integrity as the cook. All recipes are created and written by me. I prepared every dish, and took every photograph during the prep and cooking/baking. Since I am not a food stylist, thank you for your understanding! Be assured, these recipes are tested and you see the results.
By invitation only, I asked some outstanding Italian chefs to contribute recipes representing their culinary style for our Chef’s Table. Noted for their “streamlined” approach to recipe writing, it is important to maintain the integrity within their recipes. Make these Italian restaurant recipes as written or use your creativity to adapt the ideas to your style. These chefs are special, so I hope you’ll enjoy meeting them now through their recipes. Perhaps when you are in Italy, you can visit their restaurants for an exceptional meal.
