Bellini
Prosecco with White Peach Puree’
This simple combination of peach puree’ and Prosecco is probably Venice’s most famous cocktail. With scores of recipes for this drink as well as mounds of ripe yellow peaches available during summer, many people and mixologists think combining peach juice or puree’ with Prosecco makes this cocktail. Not so. Here is my personal recipe for il vero Bellini, the real Bellini, which I learned while in Venice. The secret is using white peach puree’ with a few drops of red raspberry puree’ to round-out flavor – makes all the difference for a great Prosecco cocktail.
Photo: Purposely I left the Bellini layered so you could see it with the dollop of raspberry puree’ at the bottom, topped by the white peach puree’ then the Prosecco. Change the quantities as you wish, just be sure to include all three flavors. Afterwards, briefly give it a swirl with a swizzle stick to mix all together. This is the best!
1/8 teaspoon red raspberry puree’
1 tablespoon white peach puree’
4 ounces sparkling dry Prosecco
In a flute, pour in the raspberry puree’ and white peach puree’ then pour in the prosecco. Using a swizzle stick, briefly swirl to blend.
